Leaving it as xy - 2x² - 6z will be fine as well.

You just need to simplify the expression by:

(1) Expansion (remove brackets)
(2) Pay attention to sign changes (+/-)
(3) Add/subtract common terms

The final expression here cannot be factorized, so it is the simplest expression.
