For the assumption can I state that n=10 is large hence the probability that brand M phones will end up being replaced is constant?

1) n=10 is not large, usually we take n>=25 as consider large sample size.
2) For Binomial modal, if we take the sample size, or the number of trials, we say that the "number of telephones is a constant", not its probability of being replaced.
3) If we say the probability of one phone being replaced is a constant, we don't need to mention the sample size n.
Large sample size is for use in sampling, the Central Limit Theorem in Normal Distribution..
