y increasing function means the graph is always increasing or “moving up” from right to left as x increases.

How can the graph be constantly going up? What’s the link to the gradient of the graph?

Gradient of graph or the dy/dx must be always positive or equal 0 such that the graph can always “move up” hence being an increasing function.
