Chocolate cookies sold
= 5/8 of all chocolate cookies
= 5/8 x 4/5 of total cookies
= 1/2 of total cookies
= 3/6 of total cookies

Cookies left = 1/3 of total
= 2/6 of total

Fraction of total that is made up of the sold butter cookies
= 1 - 2/6 - 3/6
= 1/6

125 cookies = 1/6 of total

Fraction of cookies sold
= 1 - 2/6
= 4/6

= 4 x 125
= 500
