The graphs are different because the actual process is not first order, hence the theoretical output is different from experimental output.

I do not think it can be explained just with words, we need some derivations to show why it is so.

The best you can say is the actual output varies linearly with time, and the Laplace transform of this linear function shows the actual process has second order poles and zeros transfer function.
