why cosAx = -1 for minimum value ?

Range of all cosine is -1 =< cos x =< 1
Same for all sine, -1 =< sin x =< 1

Therefore, minimum f happens when the cosine is minimum, because f = sum of two values...

1st
the 3 in 3cosA(x) is the amplitude of the graph, which means how far the maximum and minimum point is from the line cutting the centre of the graph horizontally

"+B" is shifting of the graph upwards such that the line cutting through ths graph is shifted upawards (the same line as mentioned above)
