The digestion of carbohydrates starts in the mouth. Chewing with the teeth breaks the potato into smaller pieces, and amylase (an enzyme) further breaks down the carbohydrates found in the potato. As the mash passes through the digestive system, they are metabolised to produce simple sugars that are absorbed into the blood vessels lining the small intestines. The simple sugars are then utilised to produce energy during respiration.

The body is unable to absorb the carbohydrates through the blood vessels due to their sizes. Digestion breaks the carbohydrates into simple sugars which are small enough to be absorbed. The simple sugars can be used during respiration to provide energy for both physical activities of the body and chemical activities within the body to create essential compounds for the proper functioning of the body.
