“The product of the 2 digits is 56” is the clue here.

Product of the 2 digits means if the number is for example 61. The product of the 2 digit is 6 x 1 = 6

Now our goal is to find which two digits multiplies and gives us 56.

To do so, we need to find the factors of 56.
1 x 56 = 56
2 x 28 = 56
4 x 14 = 56
7 x 8 = 56

Right here we see that the only 2 numbers that are single digits and gives us 56 is 7 x 8.
Therefore we can conclude the 2 digit number they are thinking of is 78.
